Marble Cake
Marble cake is really two simple batters — one plain, one chocolate — swirled together just enough to create the classic ripple pattern without fully blending. It's an easy way to make a cake feel special without any extra techniques.
Ingredients
- 3 large eggs
- 1 1/2 cups (300g) sugar
- 1/2 cup (120ml) neutral oil
- 1 cup (240ml) whole milk
- 2 1/2 cups (310g) all-purpose flour
- 1 tablespoon baking powder
- 3 tablespoons cocoa powder + 2 tbsp milk, for the chocolate half
Instructions
- Preheat the oven to 350°F (180°C) and grease a bundt pan.
- Whisk the eggs, sugar, oil, and milk together, then fold in the flour and baking powder to make one batter.
- Divide the batter in half. Mix the cocoa powder and extra milk into one half until smooth.
- Spoon the two batters into the pan in alternating dollops.
- Drag a knife or skewer through the batter in a few swirling motions to create the marble pattern.
- Bake for 35-40 minutes, until a toothpick comes out clean. Cool 10 minutes before unmolding.
Tips
- Don't overswirl — 4 or 5 passes with the knife is enough for a clear marble pattern.
- Alternating dollops rather than pouring each batter in one layer gives a more even marble.
- A dusting of powdered sugar is all this cake needs on top.
Frequently Asked Questions
Can I use melted chocolate instead of cocoa powder?
Yes — stir 2 oz of melted, cooled chocolate into half the batter instead.
Why did my swirl disappear after baking?
Overswirling blends the two batters together; fewer, deliberate swirls hold their pattern better.
