  • 1 1/2 cups (300g) sugar

  • 3/4 cup (75g) cocoa powder
  • 1 cup (240ml) hot water
  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 cup (85g) walnuts, toasted and roughly chopped, divided
  • For the glaze: 4 oz (115g) chocolate + 1/2 cup (120ml) heavy cream

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a bundt pan.
  2. Whisk the eggs, sugar, and oil together, then whisk in the cocoa powder and hot water.
  3. Fold in the flour and baking powder, then fold in half the chopped walnuts.
  4. Pour into the pan and bake for 35-40 minutes, until a toothpick comes out clean.
  5. For the glaze, heat the cream until just simmering, pour over the chopped chocolate, and stir until smooth.
  6. Cool the cake for 10 minutes, unmold, pour the glaze over the top, and press the remaining walnuts into the glaze while it's still wet.
